Eat Superfoods, Fight Breast Cancer

You may have heard of the terms superman, superstar, and super bass, but have you heard of superfoods?  It’s likely that if you are someone who has been personally affected with breast or other cancers, you know exactly what superfoods are.  It’s also very likely you would know that October is more than just a home to the Thanksgiving and Halloween holidays.  It is Breast Cancer Awareness month, which aims to educate women and their families on the disease and promote a health message that starts with prevention.

A great first step on the road of prevention is to increase your daily intake of breast cancer fighting foods.  Carrots and cruciferous vegetables (i.e. cabbage and cauliflower) are examples of superfoods that are highly recommended for the prevention of breast cancer.  They contain enzymes and chemical compounds that can inhibit cancer cell proliferation and promote anti-cancer activity.  These vegetables have been given the moniker “superfoods” due to their high level of nutrients and conferred health benefits; they are rich in dietary fiber, beta carotene and vitamins A and C, all of which have been found to lower one’s risk of developing the disease.

In support of breast cancer survivors, women and men battling the disease, and simply for your own health and wellbeing, integrate superfood meals that pack a punch into your daily diet.

Taste the Rainbow Super ‘Slaw”

Prep time: 10-15min
Cooking time: 6-8min
Servings: 8-10

What you need:

½ cup balsamic vinaigrette dressing
2 cups shredded red cabbage
1 chopped yellow bell pepper
2 cups grated carrots
1-2 tbsp diced green onions

How to prepare:

Heat dressing in large skillet on med-high heat.
Add cabbage and cook 3-5 min or until tender-crisp; stirring often.
Stir in yellow bell peppers for 1-2 min; until heated throughout.
Remove skillet off heated stove top and add carrots; mixing thoroughly.
Spoon into serving dish; top with green onions. Meal is ready to serve.
